Rotisserie Chicken

Rotisserie Chicken Recipe


Ingredients

  • 1 (3 pound) whole chicken
  • 1 pinch salt
  • 1/4 cup butter, melted
  • 1 tablespoon salt
  • 1 tablespoon paprika
  • 1/4 tablespoon ground black pepper

Directions

  1. Season the inside of the chicken with a pinch of salt. Place the chicken onto a rotisserie and set the grill on high. Cook for 10 minutes.
  2. During that time, quickly mix together the butter, 1 tablespoon of salt, paprika and pepper. Turn the grill down to medium and baste the chicken with the butter mixture. Close the lid and cook for 1 to 1 1/2 hours, basting occasionally, until the internal temperature reaches 180 degrees F (83 degrees C) when taken in the thigh with a meat thermometer.
  3. Remove from the rotisserie and let stand for 10 to 15 minutes before cutting into pieces and serving.

Ingredients


  • Wings:
  • 1/2 cup soy sauce
  • 1/2 cup Italian-style salad dressing
  • 3 pounds chicken wings, cut apart at joints, wing tips discarded
  •  
  • Sauce:
  • 1/4 cup butter
  • 1 teaspoon soy sauce
  • 1/4 cup hot pepper sauce (such as Frank's RedHot®), or to taste

Directions

  1. Combine 1/2 cup soy sauce, Italian dressing, and chicken wings in a large, zip-top bag. Close bag and refrigerate 4 hours to overnight.
  2. Preheat an outdoor grill for medium heat. In a small saucepan, melt the butter. Stir in the 1 teaspoon soy sauce and the hot pepper sauce. Turn off heat and reserve.
  3. Remove the chicken wings from the marinade and pat dry. Cook the wings on the preheated grill, turning occasionally, until the chicken is well browned and no longer pink, 25 to 30 minutes.
  4. Place grilled wings in a large bowl. Pour butter sauce over wings; toss to mix well.

Ingredients

  • 1 tablespoon smoked paprika
  • 2 teaspoons salt
  • 1 teaspoon brown sugar
  • 2 teaspoons chili powder
  • 1 teaspoon chipotle chile powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 2 pounds flat iron steaks

Directions

  1. Stir together the paprika, salt, sugar, chili powder, chipotle powder, black pepper, garlic powder, onion powder, and cumin in a small bowl until blended. Rub the seasoning mix all over the flat iron steaks, then wrap them tightly with plastic wrap. Marinate in the refrigerator 2 to 8 hours (the longer the better).
  2. Preheat an outdoor grill for medium-high heat, and lightly oil grate.
  3. Cook the steaks on the preheated grill until cooked to your desired degree of doneness, about 4 minutes per side for medium. Allow the steaks to rest for 5 minutes in a warm location before slicing.

Ingredients

  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons teriyaki sauce
  • 1 teaspoon liquid smoke flavoring
  • 1 tablespoon molasses
  • 1 tablespoon sesame seeds
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon garlic pepper
  • 2 teaspoons minced garlic
  • 1/4 cup canola oil
  • 8 skinless, boneless chicken thighs

Directions

  1. Mix together Worcestershire sauce, soy sauce, teriyaki sauce, liquid smoke, and molasses in a resealable plastic bag until the molasses has dissolved. Add sesame seeds, brown sugar, paprika, garlic salt, garlic pepper, minced garlic, and canola oil; mix well. Coat chicken thighs with the marinade, seal, and marinate for 4 hours in the refrigerator, redistributing the chicken in the marinade occasionally.
  2. Preheat an outdoor grill for medium heat.
  3. Remove chicken from marinade and shake off excess. Grill on preheated grill until the chicken has reached an internal temperature of 165 degrees F (75 degrees C), and is firm and opaque, about 12 minutes per side. Discard any remaining marinade.
